For the first time, the universe of Italian restaurants abroad, chefs, restaurant managers, culinary professionals, communicators and also consumers, is embarking on a new path, with the aim of supporting, spreading and promoting the Italian food and wine culture outside of Italy, through the creation of a specific Association, which, further on, will become a Foundation.
It is especially for its characteristic mission of protection towards the Italian food and wine culture outside of Italy, that the Association feels the need to communicate a strong and clear message to its interlocutors: its connection with Italy, the country’s symbols, territories, knowledge, stories of men and women, all being the backbone of the Italian food and wine traditions.
This is the reason why the Association will have branches all over the world, but its official headquarter will be in Casentino (Arezzo, Tuscany region). Indeed, this “closed land” (Clusentium in Latin), not contaminated and rich in experiences, has extraordinarily preserved and enhanced the traditional food and wine heritage. It can be described as the emblem of many similar countryside areas, where it is still possible to see first-hand how the traditional Italian Cuisine has changed through the time and how it later spread around the world.
